Shortbread Spirals Recipe

Hi hi! Welcome or welcome back to my blog. This weeks recipe is for shortbread spirals which I've never made before until recently but I really enjoyed the process. They're something a bit different so I thought I'd share the recipe with you this week. 

Ingredients:

2 tablespoons cocoa powder                                                                                                

1 tablespoon boiling water                                                                         

200g (7oz) butter, at room temperature 

300g (10oz) plain flour)

100g (3 ½ oz) caster sugar  

1 teaspoon vanilla essence                                               


Method:

1. Set the oven to 160° C / 350° F / Gas Mark 3. 

2. Put the cocoa powder into a mug and mix with the boiling water until smooth.

3. Cut the butter into small pieces and add to a mixing bowl with the flour and sugar. Rub the butter into the flour mixture with your finger tips to make small crumbs, or use an electric mixer.

4. Spoon half the cookie mixture into a second bowl, add the cocoa powder  to one and the vanilla essence to the other.

5. Squeeze the crumbs and cocoa powder together until the crumbs begin to stick together and form an evenly coloured dough. Wash hands and then repeat with the remaining crumbs and vanilla essence.

6. Roll out the cocoa dough between 2 sheets of non-stick baking paper to make a 20cm (8 inch) square. Do the same with the vanilla dough, using another 2 sheets of non-stick baking paper.

7. Peel the top sheets off each piece of dough. Put the cocoa dough on top of the vanilla dough so that the base paper you were rolling out is now on top. Peel this off then roll the double cookie mixture into a long roll, peeling away the other sheet of paper as you go. Chill for 15 minutes.

8. Cut the roll into 16 thick slices. Place on an ungreased baking sheet and cook for 8-10 minutes. Leave to cool on the baking sheet before serving.
