Double Berry Muffins Recipe

Hey everyone! This weeks recipe is double berry muffins which I used to make all the time for family gatherings. Another super easy and delicious recipe!

Ingredients:

300g (10oz) plain flour

3 teaspoons baking powder

125g (4oz) caster sugar

50g (2oz) butter

3 eggs

4 tablespoons sunflower oil

1 ½ teaspoons vanilla essence 

150g (5oz) natural yogurt 

100g (3 ½ oz) fresh blueberries

100g (3 ½ oz) fresh raspberries


Method:

1. Set the oven to 200° C / 400° F / Gas Mark 6.

2. Separate paper muffin cases and put one in each hole of a muffin tin.

3. Put the flour, baking powder and sugar in a mixing bowl and stir together using a fork.

4. Melt the butter in a saucepan on the hob, or use a microwave on full power for 30 seconds. 

5. Pour the melted butter into the flour and sugar mixture.

6. Add the eggs, oil, vanilla essence and yogurt and fork together until just mixed. Stir in the fresh berries.

7. Divide the mixture between the paper cases.

8. Bake for 15 minutes until the muffins are well risen and the tops have cracked and turned golden brown. Loosen the edges of the paper cases with a knife then transfer to a wire rack. Serve the muffins warm - they are best eaten on the day made.
